Pumpkin Carrot Spice Protein Muffins

These are amazing for a yummy breakfast or snack on the go. And at only 85 calories, these little powerhouses pack a delicious 4 g of protein, 15 g of carbs, and only 1 g of fat each.

(Makes 18)

1 cup flour

½ cup oat flour

2 scoops vanilla protein powder

½ cup sugar

1 tbsp. baking powder

½ tsp salt

½ tsp ground cinnamon

¼ tsp ground nutmeg

¼ tsp ground ginger

¼ tsp ground cloves

½ cup soy milk

½ cup unsweetened apple sauce

1 jar organic baby food carrots

1 jar organic baby food pumpkin

Preheat oven to 185 C (350 F). Sift together all dry ingredients. Stir in remaining ingredients until just mixed. Do not over-mix. Use an ice cream scoop to fill non-stick muffin tins. Bake until golden, about 15 minutes.
