Popeye Chickpea Omelet

This may be the perfect breakfast. And, seriously, who doesn't love a fluffy, hearty omelet in the morning! The macros are well balanced, with only 328 calories, 25 g of protein, 37 g of carbs, and 11 g of healthy fats. You also get a healthy dose of early morning veg to get your day started right. And dry ingredients for the batter can be mixed up the night before to shorten morning cooking time.

(Serves 2)

1 cup chickpea flour

1 scoop unflavored vegan protein powder

¼ cup nutritional yeast

1 ½ tsp turmeric

½ tsp garlic powder

½ tsp baking soda

½ tsp black salt

¼ tsp black pepper

1 shallot, chopped

1 cup spinach

1 tbsp. olive oil

Mix dry ingredients well. Stir in 1 cup of warm water just until combined. Do not over stir. Set aside. Sautee ½ shallot and spinach in ½ tbsp. of olive oil in an omelet pan until tender. Pour half of the batter over veggies, and continue cooking on medium heat until firm. Flip and cook until other side is brown. Fold and remove omelet from pan. Repeat for second omelet. Serve warm.
