Apple Cinnamon Protein Muffins

Cruchy, sweet top. Soft, cakey center. 4g of body friendly protein each. Pure heaven for breakfast or snacks.

(Makes 17)

1 cup flour

½ cup oat flour

2 scoops vanilla protein powder

1/3 cup sugar

1 tbsp. baking powder

½ tsp salt

½ tsp ground cinnamon

¾ cup soy milk

1½ cup unsweetened apple sauce

Topping: 1 tsp cinnamon mixed with 1 Tbsp sugar…

Preheat oven to 185 C (350 F). Sift together all dry ingredients. Stir in soy milk and apple sauce until just mixed. Do not over-mix. Use an ice cream scoop to fill non-stick muffin tins. Sprinkle each with cinnamon sugar topping. Bake until golden, about 15 minutes.
