Maple Pancakes

(Makes 2 Servings)
3/4 cup flour
1 scoop vanilla protein powder
1 tbsp. sugar
1 tbsp. baking powder
1/8 tsp salt
1 ¼ cup soy milk
1 tbsp. neutral vegetable oil
1 tbsp. maple syrup
Heat non-stick skillet on medium high. Add part of the vegetable oil to skillet. Mix dry ingredients in a bowl. Stir in soy milk until just mixed. Do not over-mix. Pour into small pancakes. Cook a few minutes on each side. Work in batches, adding more oil as needed. Serve hot with maple syrup.
