Cumin Fritters with Yogurt

These little Indian fritters make a complete meal or fantastic appetizer!

(Serves 2)

For fritters:

1 1/2 cups steamed broccoli

1 1/2 cups steamed cauliflower

1 shallot

1 cup cooked whole grain rice

1 cup nutritional yeast

400 g (2 cups) silken tofu

2 Tbsp cumin

1 tsp curry powder

1 tsp salt

To fry, 1 Tbsp olive or veggie oil

To serve, 6 oz (100g) plain soy yogurt

Pulse all of the ingredients for the fritters in a food processor until crumbled. Heat a non-stick frying pan to medium high. Add a little oil. Spoon batter into pan and form fritters. Let cook until browned. Gently turn over. Brown on other side. Place onto a plate with paper towels to drain. Continue frying, adding oil as needed. Serve warm with yogurt.
