Cheesy Cream of Potato and Spinach Soup

Baby, it's cold outside! Time for a bowl of hot comfort food!

(2 servings)

1 Tbsp olive oil

2 large or 3 medium potatoes, peeled and diced

1 medium onion, peeled and diced

2 cups vegan veggie stock

2 Tbsp fresh parsley

1 Tbsp turmeric

1 tsp salt

½ tsp ground black pepper

1 cup fresh baby spinach

½ cup nutritional yeast

1 cup soy milk

In a medium pot, sauté potato and onion in olive oil for 5 minutes, stirring frequently. Add veggie stock, parsley, turmeric, salt and pepper. Bring to a boil. Stir in spinach, lower heat, and let simmer for 15 minutes until the potatoes are tender. Stir in nutritional yeast and soy milk. Heat through. Serve hot.
