Caramelized Teriyaki Tofu Wraps with Avocado Lime Slaw

This lunch is packed with fresh veg and protein, plus healthy fats. The flavor combination is off the hook!

(Serves 2)
In a medium sized bowl, smash:
½ ripe avocado
Juice from ½ lime
1 tsp agave syrup
½ tsp salt
¼ tsp black pepper
Toss in:
1 cup shredded cabbage
1 medium carrot, peeled and shredded
1 red bell pepper, sliced into slivers
Set aside.
In a hot, non-stick pan, fry until golden:
160 g (5 ½ oz) firm tofu, sliced into two pieces in
1 tsp olive oil
Add 1 Tbsp teriyaki sauce, and fry on each side until caramelized.
Warm two large flour tortillas. Wrap 1 tofu slice and half of the slaw in each. Serve warm.
