Zen Big Bowl

This Asian bowl is warm and filling on an icy evening. The macros are perfect, with only 330 calories per serving dishing up 20 g of protein, 42 g of carbs, and only 10 g of healthy fats. And, seriously, it's beautiful!

(Serves 4)

250 g (9 oz) firm tofu, drained and diced

2 Tbsp. neutral tasting veggie oil

1 leek, chopped

3 cups vegan veggie broth

1/2 cup soya sauce

1 tsp garlic powder

2 cups broccoli, chopped

3 medium carrots, peeled and chopped

150 g (5.25 oz) Japanese soba noodles

2 Tbsp. crumbled dry wakame seaweed

In a medium sized non-stick skillet, saute tofu until it begins to turn golden. Add leek, and fry with tofu until tender. Meanwhile, bring veggie broth, soya sauce and garlic powder to a light boil. Place broccoli and carrots into a steamer basket and steam, covered, over broth until tender. Remove and drop soba noodles with wakame into broth. Cook according to package directions. Divide vegetables, tofu, and noodles up among serving bowls. Stir then pour broth mixture on top. Serve hot.
