Soft Black Bean Tacos
This is a fast, easy, and flavorful lunch or dinner to throw together in a hurry.
(Serves 4)
1 can (about 1 cup) of black beans
1 can (about 1 cup) of corn
1 Tbps nutritional yeast
½ tsp taco seasoning
1 tomato, chopped
1 cup lettuce, chopped
1 avocado, sliced
½ cup salsa
½ cup guacamole
½ cup soy yogurt, plain
8 corn tortillas, heated according to package directions
In a medium pot, heat beans, corn, nutritional yeast, and taco seasoning. Assemble tacos, layering ingredients.
