Broccoli Pilaf

This dish is a super easy side, and rich in flavor. Even my kids love it.
(Serves 4)
1 cup uncooked basmati rice
1 small onion, chopped
2 cups fresh broccoli, chopped
2 Tbsp olive oil
2 cups vegetable stock (or 2 cups water and 1 vegetable bouillon)
Salt and pepper to taste

In a pot with a matching lid, cook rice, onion, and broccoli in olive oil, stirring frequently, until the rice just starts to brown and the onion is translucent. Add stock, bring to a boil, cover, and reduce heat to low. Leave alone for 20 minutes. Fluff with fork.
Protein per serving = 4 g
